After harvesting and the period of rest and cleaning, the cereals are ground by hand with a natural stone mill.
This technique allows to have high quality flours with the double advantage of obtaining irregular granulometries with a higher bran content and a total preservation of the germ.
The latter in fact contains the most precious part of the grain, rich in antioxidants, vitamins, polyphenols and essential oils that restore the flavors of the past to the palate.
