Olive groves are traditionally grown at a height of 400-600m above sea level on the edge of the Abruzzo National Park. All stages of production, both in the field and in the process of processing, are carefully and constantly guided, as well as monitored on a sample.
The INTOSSO is a very well-known and widespread variety in the territory of Casoli. With an elliptical fruit with small umbone (relief) apex and medium size, weighing between 3-4gr. Part of the crop of Intosso olives is transformed into monovarietal oil characterized by an intense fruity grass and fresh artichoke. The taste recalls walnut and fresh vegetables, the spicy pleasant reminiscent of green pepper.
